Karen's Kickin' Pumpkin Seeds

                           

What should you do with all of those pumpkin seeds leftover from your kid's Halloween Pumpkins?  Why, do what Karen did... Uncle Dougie them!!!

 

From a fresh pumpkin, wash and pat dry the seeds.  Place the seeds in a bowl or plastic bag and add Uncle Dougie's Chicken Wing Marinade.  Let the seeds marinate for approx. 30 minutes.  Occasionally mix or turn the seeds so they are well coated with the marinade.  Place the seeds and the marinade on a 1" deep baking pan.  Bake at 300-350, flipping the seeds often until they are crispy.  

 

This is a healthy and outstanding snack!!  Just a note of caution - they will become very addictive!

 

Dougie tip:  Need more heat...sprinkle on a little Uncle Dougie's With-A-Bite Grub Rub!!

Tasty Mexican Cheese Dip

(also makes a great spread)

This is not only very easy, but it's very versatile as well.  If you ever need a nice snack, but you don't want to go through a lot of trouble, this one's for you.  All you need to do is take 1/2 lb. Velveeta Processed Cheese, and melt it in the microwave.  Be careful not to do it too long, it will burn.  Add about 3 tablespoons of Uncle Dougie's One Tough Hombre Hot Salsa.  Yep, even the kids will like this with the hot salsa!

 

Mix well and heat a little more if needed.  Serve with your favorite tortilla chips, or anything else that you like to use cheese dip with.  

 

Dougie note:  This was discovered by accident, the way most great things are.  When you refrigerate the cheese dip, it will stiffen up.  Don't worry about re-warming it in the microwave.  Instead, let it set for about 20 minutes at room temperature, then use it as a spread on crackers, celery, snack-sized bread, or anything that you want.

Spicy Chex Mix

This is what youll need:

cup butter

tsps season salt

tsps Worcestershire Sauce

cup nuts

cup pretzel sticks

tsps Uncle Dougie's Chicken Wing Marinade

cups Chex brand cereal 

 

                             

Mix together all dry ingredients and spread evenly on a baking pan.  Heat butter and marinade together and pour evenly over the dry mix.  Bake for 1 1/2 hours at 200.  

 

Makes a fantastic snack!!

 

Dougie tips: For an extra kick, add With-A-Bite Grub Rub.  Add more Uncle Dougie's Chicken Wing Marinade to taste.  Try using all nuts instead of Chex mix.  Pretzels only... you get the idea... mess around!.
